Our first spirit made in the first distillery. Using heavy Blackstrap molasses sourced from Florida sugar cane, we found ourselves in a position to create a flavor-forward spirit like no other. Being that our molasses was not only as fresh as it gets, but second to none, we set out to harness what would be the Flavor of Florida. Having been through only a single distillation, and only collecting 50% of the spirits from the run, we found the sweet spot for this particular spirit. While pulling product off the still at 120 proof, the flavors are not only well balanced but very noticeable. Once collected this spirit is allowed to open-air age for a length of 2 months to help air out the product and meld its flavors. Once aged, it then goes into a non-chill filter where coconut-carbon begins to polish the spirit and create a buttery and smooth finish. This White Rum is then the base for the rest of our rum line.
